Buon compleanno mamma!

me:happy birthday mom! What kind of cake do you want me to bake for you?
mom: oh..well..i don't know...
me: even if i'm not there with you to celebrate i want you to have a virtual cake at least!
mom: hihihi ok :)
me:come on choose something you really really really like
mom: uhmm..something with almonds inside
me: yes..i know it must be something with almonds...
mom: ...something soft and creamy...
me: ok i've got it :)

My choice has been a bit odd for a birthday cake: white brownies with almonds and baked in individual tins.
I've found this recipe on Cakes in the city (simply adorable blog!).
I've replaced pecans with almonds because my mom loves them. She even has an almond-scented eau de toilette.
A delicious birthday to you mom!

one million way to bake this

During this winter with my help S. has learnt to bake crumble and it has become
his favourite breakfast.
It's an extremely versatile type of recipe: sweet or savory, winter or summer fruits, a million different kinds of spices, flours, nuts and cereals, vegan and/or gluten free.

You can decline your favorite recipe with pears, cinnamon, hazelnuts and rolled rye.
It's perfect for the cold weather. It's like wrapping in a soft wool blanket during a chilly morning in a mountain chalet.

Place the pear peeled, chored and sliced in individual ramekins, sprinkle with cinnamon and a pinch of sea salt, add a spoon of corn malt and mix.
In a bowl combine sugar, rolled ryes, whole wheat flour and coarsely chopped hazelnuts.
Cut in margarine and mix with your fingertips.
Arrange over pears.
Bake and enjoy warm.

Winter flavors baked custard

...we brave bee stings and all
and we
don't dive
we cannon ball...

Yesterday I was fooled by spring weather and warm sun beams: simply adorable.
But today it's raining again. Damn.
I really hate winter in this humid and useless city.
Let's forget about meteopathy and have the last good flavors of this season with a baked custard: soy milk infused with magic forest green tea (a spicy combination of cinnamon, orange peel, rose petals, almond and a hint of coconut), a little orange juice, brown sugar and corn starch.
The first layer is made with powdered whole wheat cookies, orange zest and a spoon of melted margarine.
Hope spring is coming fast, meanwhile I'm listening and singing Thao and the Get Down Stay Down .
